Aznac cookies are the most famous australian cookies, the origin of these cookies goes back to World War I, when the wives of soldiers of the Australian and New Zealand Army Corps (AZNAC, hence the name of the biscuits) sent this cookies to their husbands when they were heading to combat, and thanks to the ingredients in them, were preserved for a long time in optimum conditions.

In Australia, there is even a day dedicated to these cookies!!! Here you have an easy recipe to cook Aznac cookies:

Ingredients:

  • Oat flakes: 85 gr. (1 cup)
  • Shredded coconut: 85 gr. (1 + 1/2 cups)
  • Sugar: 100 gr. (1/2 cup)
  • Wheat flour: 100 gr. (4/5 cup)
  • Butter: 100 gr. (1/2 cup)
  • 1 tablespoon of golden syrup.
  • 1 teaspoon of baking soda.
  • 2 tablespoons of boiling water.

    Preparation

In a bowl, mix the oats, flour, shredded coconut and sugar.
Put the butter in a microwaveable jar and put it in the microwave to melt. Add the syrup or honey, dissolve the baking soda in the boiling water, pour it into the jug and mix.
Make a hole in the dry ingredients and pour the contents of the jug, stir with a spoon until forming a more or less homogeneous paste, refrigerate for one hour.
Turn the oven to 180º C (302 ºF) and prepare two baking papers the size of the metal tray.
Create portions with a spoon (or with clean hands) and distribute them on the baking papers, they have to be separated because they grow a lot.
Bake in the center of the oven for 10-15 minutes until they are browned, although they look like they are not made, they are very fragile and hot, but they cool fast and are consistent.
